Ingredients
- 1 1/2 cups all-purpose flour or whole wheat flour
- 1/2 cup granulated sweetener (e.g., Stevia or Erythritol)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- Zest of 1 lemon
- 1/2 cup unsweetened applesauce
- 1/2 cup Greek yogurt (fat-free or low-fat)
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp fresh lemon juice
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups.
- In a large bowl, whisk together the flour, sweetener, baking powder, baking soda, salt, and lemon zest.
- In another bowl, combine the applesauce, Greek yogurt, eggs, vanilla extract, and lemon juice.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the blueberries.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- You can substitute the granulated sweetener with other preferred sweeteners. Adjust the amount based on sweetness preference.
- If using frozen blueberries, do not thaw them before adding to the batter.
