Ingredients
- 1 can (15 oz) pumpkin puree
- 1 cup vegetable oil
- 4 eggs
- 2 cups sugar
- 2 cups all-purpose flour
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 package (8 oz) cream cheese, softened
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F. Grease a 9x13-inch baking pan.
- In a large bowl, mix pumpkin puree, oil, eggs, and sugar until well combined.
- In a separate bowl, combine flour, cinnamon, baking powder, baking soda, and salt. Gradually add to pumpkin mixture and mix until smooth.
- Pour batter into the prepared pan and bake for 25-30 minutes, until a toothpick comes out clean. Cool completely.
- For the frosting, beat cream cheese and butter together until smooth. Add powdered sugar and vanilla, mixing until creamy.
- Spread frosting evenly over cooled pumpkin bars. Cut into squares and serve.
