Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  • In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  • In another bowl, combine the pumpkin puree, vegetable oil, eggs, water, and vanilla extract. Mix until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • If using, fold in the chopped nuts or chocolate chips.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • This bread can be made ahead and freezes well for up to 3 months.
  • For extra moisture, substitute some of the oil with applesauce.
