Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 small onion, diced
2 garlic cloves, minced
1 cup uncooked long-grain white rice
2 cups chicken broth
1 cup heavy cream
1 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon dried thyme
1 cup shredded cheddar cheese (optional)
Fresh parsley for garnish
Instructions
Heat olive oil in a large skillet over medium heat.
Season chicken with salt, pepper, paprika, and thyme.
Sear chicken on both sides until golden, about 4–5 minutes per side. Remove and set aside.
In the same skillet, sauté onion until translucent. Add garlic and cook 1 more minute.
Stir in rice, chicken broth, and heavy cream. Bring to a simmer.
Return chicken to skillet. Cover and cook on low for 20–25 minutes, or until rice is tender and chicken is cooked through.
Top with cheese (if using), cover again to melt cheese.
Garnish with parsley and serve hot.
