Ingredients
- 5-6 large russet potatoes, peeled and diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups heavy cream
- 1/2 cup unsalted butter
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 6 bacon strips, cooked and crumbled
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the onions and garlic, and sauté until translucent.
- Add the diced potatoes and broth to the pot. Increase the heat to bring to a boil.
- Once boiling, reduce the heat to low and let simmer until the potatoes are tender, about 15-20 minutes.
- Using an immersion blender (or in batches in a regular blender), blend the soup until smooth.
- Add the heavy cream, shredded cheddar, and sour cream. Stir until the cheese is melted and the soup is well combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with crumbled bacon and chopped green onions.
Notes
For a vegetarian version, omit the bacon and use vegetable broth. You can also add other seasonings like smoked paprika or garlic powder for extra flavor.
