- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- Olive oil, for grilling
- 4 ounces goat cheese, crumbled
- 1/4 cup sun-dried tomatoes, chopped
- 2 tablespoons fresh basil, chopped
For the Lemon Butter Sauce:
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1/4 cup white wine or chicken broth
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions
- Preheat your grill or grill pan over medium heat. Lightly oil the grill grates.
- Season the chicken breasts with salt and pepper. Lightly brush them with olive oil.
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).
- While the chicken is grilling, prepare the lemon butter sauce. In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1 minute.
- Pour in the white wine or chicken broth and let it simmer for 2-3 minutes. Add the lemon juice, salt, and pepper. Mix well and remove from heat.
- Once the chicken is cooked through, transfer it to serving plates.
- Immediately top each chicken breast with crumbled goat cheese, sun-dried tomatoes, and fresh basil.
- Drizzle the warm lemon butter sauce over the chicken.
- Serve immediately with your favorite side dish.
