Description

Ingredients

    1. 4 boneless, skinless chicken breasts
    2. Salt and pepper, to taste
    3. Olive oil, for grilling
    4. 4 ounces goat cheese, crumbled
    5. 1/4 cup sun-dried tomatoes, chopped
    6. 2 tablespoons fresh basil, chopped

    For the Lemon Butter Sauce:

    1. 1/2 cup unsalted butter
    2. 4 cloves garlic, minced
    3. 1/4 cup white wine or chicken broth
    4. Juice of 1 lemon
    5. Salt and pepper, to taste

Instructions

  1. Preheat your grill or grill pan over medium heat. Lightly oil the grill grates.
  2. Season the chicken breasts with salt and pepper. Lightly brush them with olive oil.
  3. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).
  4. While the chicken is grilling, prepare the lemon butter sauce. In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1 minute.
  5. Pour in the white wine or chicken broth and let it simmer for 2-3 minutes. Add the lemon juice, salt, and pepper. Mix well and remove from heat.
  6. Once the chicken is cooked through, transfer it to serving plates.
  7. Immediately top each chicken breast with crumbled goat cheese, sun-dried tomatoes, and fresh basil.
  8. Drizzle the warm lemon butter sauce over the chicken.
