Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 lb baby potatoes, halved
  • 1 large onion, quartered
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp paprika
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  • Preheat the oven to 425°F (220°C).
  • In a large mixing bowl, combine olive oil, garlic, rosemary, thyme, paprika, salt, and pepper.
  • Add the chicken thighs and potatoes to the bowl, tossing to coat them evenly with the seasoning mixture.
  • Arrange the chicken thighs and potatoes on a large baking sheet in a single layer. Place onion quarters around the chicken and potatoes.
  • Roast in the preheated oven for 45-50 minutes, or until the chicken is cooked through and the potatoes are golden and crispy. The internal temperature of the chicken should reach 165°F (75°C).
  • If desired, broil for an additional 2-3 minutes to achieve extra crispy skin on the chicken.
  • Remove from the oven, let rest for a few minutes, then serve with lemon wedges on the side.

Notes

  • For added flavor, marinate the chicken in the seasoning mixture for at least 30 minutes before roasting.
  • Use a mix of red and yellow baby potatoes for a more colorful dish.
