  7. 2 teaspoons vanilla extract
  8. Optional: 3 to 4 tablespoons buttermilk (for brushing cookies before baking)

Instructions

  1. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  2. In a larger bowl, cream together the softened butter and sugar until smooth and light in color.
  3. Beat in the egg and vanilla extract.
  4. Gradually blend in the dry ingredients.
  5. Form the dough into a ball, and if the dough is too sticky, add more flour, a tablespoon at a time.
  6. Preheat your oven to 375°F (190°C).
  7. Roll out the dough on a floured surface, about 1/4-inch thick.
