Ingredients

- 2 teaspoons vanilla extract
- Optional: 3 to 4 tablespoons buttermilk (for brushing cookies before baking)
Instructions
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a larger bowl, cream together the softened butter and sugar until smooth and light in color.
- Beat in the egg and vanilla extract.
- Gradually blend in the dry ingredients.
- Form the dough into a ball, and if the dough is too sticky, add more flour, a tablespoon at a time.
- Preheat your oven to 375°F (190°C).
- Roll out the dough on a floured surface, about 1/4-inch thick.
- Use cookie cutters to cut out desired shapes.
- Place cookies on a parchment paper-lined baking sheet.
- If you want a sugary crust, brush cookies with buttermilk and sprinkle with granulated sugar.
- Bake for 8 to 10 minutes, or until the edges turn golden.
- Let the cookies sit on the baking sheet for a few minutes before transferring them to a cooling rack.
Notes
- For softer cookies, bake on the lower end of the time range. For crunchier cookies, bake on the higher end.
