Ingredients
- 2 cups mashed potatoes, cooled
- 1 can (120g) sardines in oil, drained and flaked
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 egg, beaten
- 1 cup breadcrumbs
- Oil for frying
Instructions
- n a large bowl, combine the mashed potatoes and flaked sardines.
- Add the chopped onion, minced garlic, parsley, paprika, salt, and pepper to the potato mixture. Mix until well combined.
- Shape the mixture into small balls, about the size of a golf ball.
- Dip each ball into the beaten egg, then roll them in breadcrumbs until evenly coated.
- Heat oil in a deep fryer or large pan to 375°F (190°C).
- Fry the balls in batches until they are golden brown and crispy, about 3-4 minutes.
- Remove the balls with a slotted spoon and drain on paper towels.
- Serve warm with your choice of dipping sauce, such as tartar sauce or a simple yogurt dip.
