Ingredients

  • 1 lb Italian sausage, sliced
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup tomato sauce
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 2 tbsp olive oil
  • 1/4 cup chopped parsley (optional)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add sliced sausages and cook until browned. Remove and set aside.
  • In the same skillet, add chopped onion and garlic, and sauté until softened.
  • Stir in diced tomatoes, tomato sauce, oregano, basil, paprika, salt, and black pepper. Simmer for 5 minutes.
  • Add cannellini beans and kidney beans to the skillet, mixing well.
  • Return the sausages to the skillet and stir to combine.
  • Transfer the mixture to a greased baking dish.
  • Bake in the preheated oven for 25-30 minutes, until bubbling and heated through.
  • (Optional) Garnish with chopped parsley before serving.
