Ingredients
- 1 lb Italian sausage links
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup marinara sauce
- 4 hoagie rolls
- 8 slices provolone or mozzarella cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add sausage links and cook until browned on all sides, about 8-10 minutes. Remove sausages and set aside.
- In the same skillet, add sliced peppers, onion, and garlic. Cook until vegetables are tender, about 5-7 minutes.
- Slice the browned sausages into 1-inch pieces and return them to the skillet with the vegetables. Add oregano, basil, red pepper flakes, and marinara sauce. Stir to combine and cook for an additional 5 minutes.
- Preheat the oven to 350°F (175°C). Open hoagie rolls and place on a baking sheet.
- Spoon the sausage and pepper mixture into each roll. Top each sandwich with two slices of cheese.
- Bake in the preheated oven for 5-7 minutes, until the cheese is melted and bubbly.
- Serve hot and enjoy.
