Ingredients
- 1 lb smoked sausage, sliced into rounds
- 1.5 lb baby potatoes, halved
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper, to taste
- Optional garnish: chopped parsley, grated Parmesan
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the halved potatoes, bell pepper, and onion with olive oil, minced garlic, thyme, paprika, salt, and pepper.
- Spread the potato mixture on the prepared baking sheet in a single layer. Roast in the oven for 20 minutes.
- Remove the sheet from the oven, add the sausage slices, and toss everything together.
- Return to the oven and roast for another 15-20 minutes, or until the potatoes are golden and crispy, and the sausage is browned.
- Garnish with chopped parsley or Parmesan, if desired, and serve hot.
