Ingredients

  • 1 lb smoked sausage, sliced into rounds
  • 1.5 lb baby potatoes, halved
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Optional garnish: chopped parsley, grated Parmesan


Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, toss the halved potatoes, bell pepper, and onion with olive oil, minced garlic, thyme, paprika, salt, and pepper.
  • Spread the potato mixture on the prepared baking sheet in a single layer. Roast in the oven for 20 minutes.
  • Remove the sheet from the oven, add the sausage slices, and toss everything together.
  • Return to the oven and roast for another 15-20 minutes, or until the potatoes are golden and crispy, and the sausage is browned.
  • Garnish with chopped parsley or Parmesan, if desired, and serve hot.
