Description
This sausage and sweet potato soup combines savory sausage with tender sweet potatoes and aromatic spices, perfect for a comforting and nutritious meal.
Ingredients
- 1 lb Italian sausage (mild or spicy)
- 2 large sweet potatoes, peeled and cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup kale, chopped
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper, to taste
- 2 tbsp olive oil
- Optional: red pepper flakes, fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Cook sausage until browned, breaking it up as it cooks. Remove sausage and set aside.
- In the same pot, sauté onions and garlic until softened.
- Add sweet potatoes, paprika, cumin, and chicken broth. Bring to a boil, then reduce to a simmer. Cook for 15-20 minutes or until sweet potatoes are tender.
- Add kale and cooked sausage back to the pot. Simmer for another 5-10 minutes until kale is wilted.
- Season with salt, pepper, and optional red pepper flakes. Serve hot, garnished with fresh parsley if desired.
Notes
- Substitute spinach for kale if preferred.
- Use spicy sausage for an extra kick, or add more red pepper flakes.
