  • Bay leaf
  • Salt
  • Pepper
  • Heavy cream or milk
  • Fresh parsley (for garnish)

Instructions

  • In a large pot, brown the ground beef or lamb over medium heat. Drain excess fat.
  • Add chopped onions, garlic, carrots, and celery; sauté until softened.
  • Stir in flour to coat the meat and vegetables, cooking for 1-2 minutes.
  • Gradually pour in beef broth, then add Worcestershire sauce, thyme, bay leaf, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer for 15 minutes. Add peas and corn, cooking until heated through.
  • Meanwhile, boil potatoes in a separate pot until tender. Mash with butter, heavy cream, salt, and pepper until smooth.
  • Serve the soup hot, topped with a scoop of mashed potatoes and garnished with fresh parsley.
