Description

This Shrimp Scampi Pasta Bake combines succulent shrimp, garlic, butter, and lemon with perfectly cooked pasta, all baked under a cheesy, golden crust. Perfect for a comforting yet elegant meal, this dish is easy to make and bursting with flavor!

Ingredients

  • 12 oz pasta (penne or linguine)
  • 1 lb shrimp, peeled and deveined
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup white wine or chicken broth
  • 1/4 cup lemon juice
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C). Cook pasta al dente according to package instructions; drain and set aside.
  • In a large skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
  • Pour in white wine (or chicken broth) and lemon juice, simmering for 2-3 minutes.
  • Add shrimp, cooking for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
  • Stir in heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Simmer for 2 minutes until slightly thickened.
  • Add cooked pasta to the sauce, tossing to coat evenly. Stir in shrimp and fresh parsley.
  • Transfer mixture to a greased baking dish. Sprinkle mozzarella cheese on top.
  • Bake for 15-20 minutes or until cheese is bubbly and golden.
  • Serve hot, garnished with extra parsley and Parmesan if desired.

Notes

  • Use fresh or frozen shrimp; just ensure they are thawed before cooking.
  • Substitute white wine with chicken broth for a non-alcoholic version.
  • Add extra red pepper flakes for a spicier kick.
  • Best served fresh but can be stored in the fridge for up to 3 days.
