Ingredients
- 1 lb ground beef
- 4 medium potatoes, sliced thin
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans (or any beans), drained and rinsed
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp salt (to taste)
- ½ tsp black pepper
- ½ cup water or beef broth
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Layer the slow cooker starting with half the sliced potatoes, followed by half the cooked ground beef, diced onions, and garlic.
- Add half the beans, half the diced tomatoes, and a sprinkle of spices. Repeat layers with the remaining ingredients.
- Spread the cream of mushroom soup evenly over the top layer. Pour in water or broth.
- Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until the potatoes are tender.
- Sprinkle shredded cheddar cheese on top, cover, and cook for an additional 15 minutes until the cheese melts.
