Ingredients

  • 3 lb beef chuck roast
  • 1 packet (1 oz) Italian seasoning mix
  • 1 cup beef broth
  • 1 jar (16 oz) pepperoncini peppers, with juice
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • 6 crusty rolls or hoagie buns
  • Optional: Provolone cheese, giardiniera (Italian pickled vegetables)


Instructions

  • Place the beef chuck roast in the slow cooker. Season with salt, pepper, Italian seasoning mix, oregano, and basil.
  • Add sliced onion, minced garlic, and pepperoncini peppers with juice. Pour beef broth over the top.
  • Cover and cook on low for 8 hours, or until the beef is tender and easily shredded.
  • Once cooked, shred the beef with two forks and mix it back into the juices in the slow cooker.
  • Serve the shredded beef on crusty rolls, and top with provolone cheese and giardiniera, if desired.

Notes

  • For a spicier version, add extra red pepper flakes or more pepperoncini juice.
