Ingredients
- 3 lb beef chuck roast
- 1 packet (1 oz) Italian seasoning mix
- 1 cup beef broth
- 1 jar (16 oz) pepperoncini peppers, with juice
- 1 onion, sliced
- 4 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper, to taste
- 6 crusty rolls or hoagie buns
- Optional: Provolone cheese, giardiniera (Italian pickled vegetables)
Instructions
- Place the beef chuck roast in the slow cooker. Season with salt, pepper, Italian seasoning mix, oregano, and basil.
- Add sliced onion, minced garlic, and pepperoncini peppers with juice. Pour beef broth over the top.
- Cover and cook on low for 8 hours, or until the beef is tender and easily shredded.
- Once cooked, shred the beef with two forks and mix it back into the juices in the slow cooker.
- Serve the shredded beef on crusty rolls, and top with provolone cheese and giardiniera, if desired.
