Ingredients

  • 3 lbs chuck roast
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and quartered
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried rosemary
  • 1 tsp dried thyme

Instructions

  1. Heat olive oil in a large skillet over medium heat and brown the roast on all sides.
  2. Place the sliced onion in the bottom of the slow cooker. Add the browned roast on top.
  3. Arrange garlic, carrots, and potatoes around the roast.
  4. Pour beef broth and Worcestershire sauce over the meat and vegetables.
  5. Season with salt, pepper, rosemary, and thyme.
  6. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the roast is tender.
  7. Remove the roast and vegetables from the slow cooker, and let rest before slicing the meat.
