Ingredients
- 2 cups cooked shredded chicken
- 1 cup cooked white or brown rice
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar or Monterey Jack cheese (plus extra for topping)
- 1 can (10 oz) enchilada sauce
- 4 large flour tortillas
- 1/2 cup sour cream (optional, for garnish)
- 1/4 cup chopped cilantro (optional, for garnish)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine shredded chicken, cooked rice, black beans, and 1/2 cup shredded cheese. Season with salt and pepper.
- Lay a tortilla flat and spoon the chicken mixture onto the center. Roll it up tightly and place seam-side down in a greased baking dish.
- Repeat with the remaining tortillas.
- Pour the enchilada sauce evenly over the burritos. Sprinkle extra shredded cheese on top.
- Cover the dish with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly and golden.
- Garnish with sour cream and cilantro, if desired. Serve warm.
