Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder

- 1 cup buttermilk
- 2 eggs
- 1/4 cup melted butter
- 1/4 cup honey
- 1 tsp vanilla extract
- 1/2 cup vegetable oil (for frying)
Instructions
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix buttermilk, eggs, melted butter, honey, and vanilla.
- Gradually combine wet and dry ingredients until smooth.
- Heat vegetable oil in a pan over medium heat.
- Scoop small spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove and drain on paper towels.
- Serve warm with extra honey butter for dipping.
