Description

Southern-style honey butter cornbread poppers are bite-sized, golden, and slightly sweet treats made with rich honey and creamy butter. These poppers are perfect for snacking, as a side dish, or for entertaining guests.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 eggs
  • 1/4 cup melted butter
  • 1/4 cup honey
  • 1 tsp vanilla extract

 

  • 1/2 cup vegetable oil (for frying)


Instructions

  • In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  • In another bowl, mix buttermilk, eggs, melted butter, honey, and vanilla.
  • Gradually combine wet and dry ingredients until smooth.
  • Heat vegetable oil in a pan over medium heat.
  • Scoop small spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
  • Remove and drain on paper towels.

 

  • Serve warm with extra honey butter for dipping.

  • For extra crispiness, let the batter rest for 10 minutes before frying.
