Ingredients

 

  • Boneless, skinless chicken breasts
  • White beans (cannellini or great Northern)
  • Chicken broth
  • Green chiles
  • Corn kernels (fresh, frozen, or canned)
  • Onion
  • Garlic
  • Ground cumin
  • Chili powder
  • Smoked paprika
  • Ground coriander
  • Olive oil
  • Fresh cilantro
  • Lime juice
  • Salt and pepper

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions and garlic, sauté until softened.
  • Add chicken breasts and cook until lightly browned on both sides.
  • Stir in cumin, chili powder, smoked paprika, and coriander, cooking for 1 minute.
  • Pour in chicken broth, white beans, green chiles, and corn, bring to a simmer.
  • Reduce heat, cover, and cook for 15-20 minutes, until chicken is fully cooked.
  • Remove chicken, shred with forks, and return to the pot.
  • Stir in fresh lime juice, cilantro, salt, and pepper to taste.
  • Serve hot, garnished with additional cilantro, lime wedges, or tortilla strips if desired.
