Ingredients
- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced red bell pepper
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 20 egg roll wrappers
- Oil for frying
Instructions
- In a large bowl, combine chicken, black beans, corn, cheese, bell pepper, green onions, cilantro, cumin, chili powder, garlic powder, salt, and pepper. Mix well.
- Lay out an egg roll wrapper with one corner pointing toward you. Place 2-3 tablespoons of filling near the center of the wrapper.
- Fold the bottom corner up over the filling. Fold in the sides, then roll up tightly.
- Heat oil in a deep fryer or large skillet to 350°F (175°C). Fry egg rolls in batches for 3-4 minutes, or until golden brown and crispy.
- Drain on paper towels and serve warm with your favorite dipping sauce.
