Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 20 egg roll wrappers
  • Oil for frying

Instructions

  • In a large bowl, combine chicken, black beans, corn, cheese, bell pepper, green onions, cilantro, cumin, chili powder, garlic powder, salt, and pepper. Mix well.
  • Lay out an egg roll wrapper with one corner pointing toward you. Place 2-3 tablespoons of filling near the center of the wrapper.
  • Fold the bottom corner up over the filling. Fold in the sides, then roll up tightly.
  • Heat oil in a deep fryer or large skillet to 350°F (175°C). Fry egg rolls in batches for 3-4 minutes, or until golden brown and crispy.
  • Drain on paper towels and serve warm with your favorite dipping sauce.

Notes

  • These egg rolls can be baked instead of fried. Preheat the oven to 425°F (220°C) and bake for 15-20 minutes, or until golden brown.
