Ingredients

  • 1 pound spicy Italian sausage, casing removed
  • 1 onion, chopped

  • 1 cup long-grain white rice
  • 1 can (14.5 ounces) diced tomatoes with juice
  • 2 cups chicken broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/2 cup frozen peas (optional)
  • 1/2 cup shredded cheddar cheese (optional, for topping)


Instructions

  1. Cook the Sausage:

    • In a large skillet or Dutch oven over medium heat, cook the sausage until browned, breaking it apart with a spoon as it cooks.
  2. Sauté Vegetables:

    • Add the chopped onion, garlic, bell pepper, and jalapeño to the skillet with the sausage. Sauté until the vegetables are softened, about 5 minutes.
  3. Add Rice and Liquids:

    • Stir in the rice, diced tomatoes with their juice, and chicken broth. Season with smoked paprika, cayenne pepper, oregano, salt, and black pepper.
  4. Simmer the Casserole:

    • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is tender and most of the liquid has been absorbed.
  5. Add Peas and Cheese:

    • Stir in the frozen peas and continue to cook for another 5 minutes, uncovered. If using cheese, sprinkle it over the top and cover until the cheese is melted.
