Ingredients
1 pre-made pie crust
1 tbsp olive oil
1 small onion, diced
2 cups fresh spinach, chopped
1 cup mushrooms, sliced
3 large eggs
1 cup milk or half-and-half
1 cup shredded cheese (Swiss, Gruyère, or cheddar)
Salt and pepper to taste
¼ tsp nutmeg (optional)
Instructions
Preheat oven to 375°F (190°C).
Place pie crust in a 9-inch pie pan.
In a skillet, heat olive oil over medium heat. Sauté onion until translucent.
Add mushrooms and cook until soft. Stir in spinach and cook until wilted. Remove from heat.
In a bowl, whisk eggs, milk, salt, pepper, and nutmeg (if using).
Spread the sautéed vegetables over the crust, then sprinkle cheese on top.
