Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 2 cups fresh strawberries, chopped
  • ¾ cup granulated sugar
  • ¼ cup water
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream

 

  • 1 tsp vanilla extract

Instructions

  • Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch pie dish and refrigerate.
  • Make the Strawberry Filling: In a saucepan, cook strawberries, sugar, water, cornstarch, and lemon juice until thickened. Let cool.
  • Prepare the Creamy Layer: Beat cream cheese until smooth, then fold in whipped heavy cream and vanilla.
  • Assemble the Pie: Spread the cream cheese mixture over the crust, then top with the strawberry filling.

 

  • Chill: Refrigerate for at least 4 hours or until set. Serve chilled.
