Ingredients

  • Chicken breasts
  • Spinach (fresh or frozen)
  • Cream cheese
  • Mozzarella or cheddar cheese
  • Garlic
  • Olive oil
  • Italian seasoning
  • Salt & pepper
  • Toothpicks or kitchen twine

Instructions

  • Preheat oven to 375°F. Season chicken breasts with salt, pepper, and Italian seasoning.
  • Sauté garlic and spinach in olive oil until wilted. Combine with cream cheese and shredded mozzarella.
  • Cut a pocket into each chicken breast and stuff with the spinach-cheese mixture.
  • Secure the opening with toothpicks or kitchen twine.
  • Heat olive oil in a skillet, sear the chicken on both sides until golden brown, then transfer to the oven.
  • Bake for 20-25 minutes until the chicken is fully cooked through. Let it rest before serving.
