- 1 packet taco seasoning
- 1 can (10 oz) Rotel (diced tomatoes with green chiles)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- 8 small corn or flour tortillas, torn into pieces
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup salsa
- 1/4 cup sour cream (optional, for serving)
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the taco seasoning, Rotel, black beans, and corn to the beef. Stir to combine and cook for an additional 3-4 minutes.
- In a greased 9x13 inch baking dish, layer half of the torn tortillas, then half of the beef mixture, followed by half of the shredded cheeses.
- Repeat the layers with the remaining tortillas, beef mixture, and cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let sit for 5 minutes before serving.
- Serve with sour cream, salsa, and garnish with fresh cilantro, if desired.
