Ingredients
- 2 lbs ground beef
- 1 packet (1 oz) taco seasoning mix
- 1 cup crushed tortilla chips
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 1/4 cup sour cream
- 2 large eggs
- 1 small onion, finely chopped
- 1/2 cup chopped bell pepper
- 1/4 cup chopped fresh cilantro
- 1 tsp garlic powder
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, combine ground beef, taco seasoning mix, crushed tortilla chips, shredded cheddar cheese, salsa, sour cream, eggs, onion, bell pepper, cilantro, garlic powder, and black pepper. Mix until well combined.
- Press the meat mixture into the prepared loaf pan, shaping it into a loaf.
- Bake in the preheated oven for 60-70 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing. Serve with additional salsa and sour cream if desired.
