Ingredients

  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 cups pasta (penne or rotini)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional toppings: cilantro, jalapeños, sliced avocado, lime wedges

Instructions

  • Cook pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for 2-3 minutes until softened.
  • Add ground beef to the skillet and cook until browned, about 5-7 minutes. Drain excess fat.
  • Stir in minced garlic and taco seasoning, cooking for 1 minute.
  • Add diced tomatoes and beef broth. Stir and let simmer for 5 minutes to blend flavors.
