Ingredients

- 1 can (14.5 oz) diced tomatoes
- 1 cup beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tbsp olive oil
- Salt and pepper, to taste

Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for 2-3 minutes until softened.

- Stir in minced garlic and taco seasoning, cooking for 1 minute.
