Ingredients
- Ground beef
- Potatoes, diced
- Taco seasoning
- Cheddar cheese, shredded
- Sour cream
- Salsa
- Green onions
- Black olives, sliced
- Jalapeños, sliced
- Olive oil
- Salt and pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced potatoes in olive oil, salt, and pepper. Spread on a baking sheet and bake for 20 minutes until tender.
- Brown ground beef in a skillet, add taco seasoning according to package instructions.
- In a casserole dish, layer cooked potatoes, seasoned ground beef, salsa, and half of the cheese.
- Bake for 15 minutes. Top with remaining cheese, and bake until cheese is melted, about 5 minutes more.
- Garnish with sour cream, green onions, black olives, and jalapeños.
