Description

Ingredients

  • Ground beef
  • Potatoes, diced
  • Taco seasoning
  • Cheddar cheese, shredded
  • Sour cream
  • Salsa
  • Green onions
  • Black olives, sliced
  • Jalapeños, sliced
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced potatoes in olive oil, salt, and pepper. Spread on a baking sheet and bake for 20 minutes until tender.
  3. Brown ground beef in a skillet, add taco seasoning according to package instructions.
  4. In a casserole dish, layer cooked potatoes, seasoned ground beef, salsa, and half of the cheese.
  5. Bake for 15 minutes. Top with remaining cheese, and bake until cheese is melted, about 5 minutes more.
  6. Garnish with sour cream, green onions, black olives, and jalapeños.
