Ingredients

  • 4 medium-sized potatoes, diced
  • 1 tbsp olive oil
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onions
  • 1/4 cup sliced jalapeños (optional)
  • 1/4 cup sour cream
  • 2 tbsp chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss diced potatoes with olive oil, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast potatoes in the oven for 25-30 minutes, flipping halfway, until golden and crispy.
  4. While potatoes cook, heat a skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
