Ingredients
- 4 medium-sized potatoes, diced
- 1 tbsp olive oil
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup diced tomatoes
- 1/4 cup diced red onions
- 1/4 cup sliced jalapeños (optional)
- 1/4 cup sour cream
- 2 tbsp chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss diced potatoes with olive oil, salt, and pepper. Spread evenly on the baking sheet.
- Roast potatoes in the oven for 25-30 minutes, flipping halfway, until golden and crispy.
- While potatoes cook, heat a skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
- Stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.
