Description

Ingredients

  • 1 lb ground beef
  • 12 corn tortillas
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup water or beef broth
  • Oil for frying (vegetable or canola)
  • Optional toppings: shredded lettuce, diced tomatoes, salsa, cheese, sour cream, guacamole

Instructions

  • Heat a skillet over medium heat and add ground beef. Cook until browned, breaking it up as it cooks. Drain excess fat.
  • Add diced onions and garlic to the beef and sauté until onions are softened.
  • Stir in cumin, chili powder, paprika, salt, pepper, and water or beef broth. Let simmer for 5-7 minutes until flavors combine and beef is fully cooked. Set aside.
  • Heat about 1/2 inch of oil in a large frying pan over medium heat.
  • Warm the corn tortillas in the microwave or on a dry skillet to make them pliable. Spoon 2-3 tablespoons of the ground beef mixture onto one side of each tortilla and fold in half.
  • Carefully place the filled tortillas in the hot oil and fry for 2-3 minutes per side, until golden brown and crispy. Remove and drain on paper towels.
  • Serve hot with your favorite toppings like shredded lettuce, cheese, salsa, and sour cream.
