Ingredients

  • 1 lb ground beef
  • 1/2 lb ground pork or sausage (optional)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (8 oz) tomato sauce
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper (optional)
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • Salt and pepper to taste
  • 1 tbsp olive oil


Instructions

  • Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Add ground beef (and ground pork, if using) to the pot, cooking until browned and crumbled. Drain excess fat.
  • Stir in chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and pepper.
  • Add diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, and brown sugar. Stir well.
  • Bring to a simmer, then reduce heat to low.
  • Add kidney beans and pinto beans. Cover and let simmer for 45 minutes, stirring occasionally.
  • Adjust seasoning to taste before serving. Serve hot, garnished with your favorite toppings.

Notes

  • For added depth of flavor, let the chili simmer for over an hour.
  • To customize the heat, adjust the cayenne pepper or add fresh chilies.
