Ingredients

  • 1 lb boneless, skinless chicken breasts (sliced into strips)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 yellow onion (sliced)
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lime
  • Tortillas (for serving)
  • Optional toppings: sour cream, guacamole, shredded cheese

Instructions

  • In a small bowl, mix chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper.
  • Season the chicken strips with the spice mixture.
  • Heat 1 tbsp of olive oil in a skillet over medium-high heat. Sear the chicken until cooked through, about 5-7 minutes. Remove and set aside.
  • Add the remaining olive oil to the skillet and sauté bell peppers and onions until tender and slightly charred, about 5 minutes.
  • Return the chicken to the skillet, add lime juice, and toss to combine.
  • Serve hot with warm tortillas and your favorite toppings.

Notes

  • For a spicier fajita, add a pinch of cayenne pepper to the spice mix.
