Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup whole milk
  • 1/4 cup strong brewed espresso (cooled)
  • For brushing:
  • 1/4 cup espresso + 1 tbsp coffee liqueur (optional)
  • Mascarpone Frosting:
  • 8 oz mascarpone cheese
  • 1/2 cup heavy cream
  • 1/3 cup powdered sugar
  • 1/2 tsp vanilla extract
  • Unsweetened cocoa powder for dusting


Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  4. Add flour mixture and milk alternately to the wet mixture, beginning and ending with flour.
  5. Divide batter into liners and bake for 18–20 minutes. Let cool.
  6. Brush cooled cupcakes with espresso and liqueur mixture.
  7. Whip mascarpone, cream, powdered sugar, and vanilla until thick and fluffy.
  8. Pipe frosting onto cupcakes and dust with cocoa powder before serving.

Notes

  • For extra flavor, chill cupcakes overnight after frosting.
  • Can substitute mascarpone with cream cheese in a pinch.
