This White Cheese Chicken Lasagna is a luxurious twist on classic lasagna. Layered with tender chicken, creamy white sauce, and a blend of cheeses, it's a gourmet meal that's perfect for impressing guests or treating your family to a special dinner.
Ingredients
- 9 lasagna noodles, cooked
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup all-purpose flour
- 2 cups chicken broth
- 1 1/2 cups milk
- 2 cups ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon ground black pepper
- 2 cups cooked, shredded chicken breast
- 3 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese for topping
- 2 cups fresh spinach, chopped (optional)

Preheat Oven:
- Preheat your oven to 350°F (175°C).

Prepare the Sauce:
- Heat olive oil in a large saucepan over medium heat. Sauté onion and garlic until tender.
- Stir in flour and cook for 1 minute. Gradually whisk in chicken broth and milk, and cook, stirring constantly, until the sauce thickens.

Cheese Mixture:
- In a bowl, combine ricotta cheese, 1/2 cup Parmesan cheese, basil, oregano, and black pepper.

Assemble the Lasagna:
- Spread a small amount of the sauce in the bottom of a 9x13 inch baking dish. Layer 3 lasagna noodles, 1/3 of the ricotta mixture, 1/3 of the shredded chicken, 1/3 of the spinach (if using), and 1/3 of the mozzarella. Repeat layering two more times.

Top Layer:
- Finish with the remaining sauce and sprinkle with 1 cup of Parmesan cheese.

- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 25 minutes or until hot and bubbly.

- Let stand 10 minutes before serving to allow the lasagna to set
