Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 8 cups chicken broth
- 2 boneless, skinless chicken breasts
- 1 bay leaf
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 1/2 cup long-grain rice or egg noodles (optional)
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions, carrots, and celery, sautéing until softened.
- Add the garlic and sauté for an additional minute.
- Pour in the chicken broth, then add the chicken breasts, bay leaf, rosemary, and thyme. Season with salt and pepper.
- Bring the mixture to a boil, then reduce to a simmer. Cover and let it simmer for about 25 minutes, or until the chicken is cooked through.
- Remove the chicken from the soup, shred it using two forks, and then return it to the pot.
- If adding rice or noodles, introduce them now and cook until tender.
- Adjust seasoning if necessary, remove the bay leaf, and stir in the fresh parsley just before serving.
Notes
For a richer flavor, consider using bone-in chicken. You can also add additional vegetables like peas or corn, as per preference.
