Description

Savor the rich and hearty flavors of this chili, inspired by the iconic Zippy's Chili Recipe from Hawaii. Perfectly spiced and filled with meat and beans, this dish is the embodiment of comfort food.

Ingredients

  1. 1 lb ground beef
  2. 1 lb ground pork
  3. 1 tbsp vegetable oil
  4. 1 onion, finely chopped
  5. 3 cloves garlic, minced
  6. 1 can (15 oz) red kidney beans, drained and rinsed
  7. 1 can (15 oz) tomato sauce
  8. 2 tbsp tomato paste
  9. 1 cup beef or chicken broth
  10. 1 tsp ground cumin
  11. 1 tsp chili powder
  12. 1/2 tsp paprika
  13. Salt and pepper to taste
  14. Optional toppings: shredded cheese, chopped green onions, white rice (serving with rice is a common practice in Hawaii)

Instructions

  1. Brown the Meats: In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the ground beef and pork. Cook until browned, breaking the meat into small pieces as it cooks. Once browned, remove excess fat.
  2. Sauté Vegetables: Add the chopped onion to the pot with the meat and sauté until translucent, about 4-5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Combine Ingredients: Add the kidney beans, tomato sauce, tomato paste, broth, cumin, chili powder, paprika, salt, and pepper to the pot. Stir well to combine.
  4. Simmer: Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally. The chili should thicken and the flavors will meld together.
  5. Serve: Adjust seasonings if necessary. Serve the chili hot with optional toppings and, if desired, over a bed of white rice.
