Ingredients

 

  • 2 large zucchinis
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • Fresh basil leaves (optional, for garnish)

Instructions

  • Preheat oven to 375°F (190°C).
  • Slice zucchinis lengthwise into thin strips using a mandoline or sharp knife.
  • In a bowl, mix ricotta cheese, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper.
  • Spread a thin layer of the ricotta mixture on each zucchini slice and roll up.
  • Pour marinara sauce into a baking dish, place the rolls on top, and bake for 20-25 minutes until golden and bubbly.
  • Garnish with fresh basil and serve warm.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the ricotta mixture.
