Ingredients
- 2 large zucchinis

Instructions
- Preheat oven to 375°F (190°C).
- Slice zucchinis lengthwise into thin strips using a mandoline or sharp knife.
- In a bowl, mix ricotta cheese, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper.
- Spread a thin layer of the ricotta mixture on each zucchini slice and roll up.
