Description
These Baked Chicken Nuggets coated with Parmesan are crispy on the outside and juicy inside. An easy, healthier alternative to fried nuggets.
Ingredients
3 boneless, skinless chicken breasts
1 teaspoon kosher or coarse salt, divided
1 teaspoon black pepper, divided
½ cup buttermilk
1 cup panko breadcrumbs
½ cup grated high-quality Parmesan cheese
1 teaspoon favorite herb blend (optional)
1 cup all-purpose flour
½ cup butter, melted
2 eggs, lightly beaten
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Cut the chicken breasts into bite-sized pieces. Season with half the salt and pepper.
Dip the chicken pieces first in flour, then in a mixture of beaten eggs and buttermilk, and finally coat with a blend of panko, Parmesan, the remaining salt and pepper, and herbs.
Arrange the chicken on the prepared baking sheet and drizzle with melted butter.
Bake for 20-25 minutes, or until the chicken is golden brown and cooked through.
Notes
Ensure the chicken pieces are dry before coating to help the mixture stick better.
Serve with a side of homemade honey mustard or BBQ sauce for extra flavor.
