This Best-ever Chicken Carbonara Recipe combines tender chicken, crispy bacon, creamy sauce, and al dente pasta for an irresistible dinner that's quick and easy to make!
Ingredients
- 12 oz spaghetti (or pasta of choice)
- 2 boneless, skinless chicken breasts, diced
- 6 slices of bacon, chopped
- 3 large eggs
- 1 cup grated Parmesan cheese
- 1 tsp minced garlic
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Cook spaghetti in salted water according to package instructions. Reserve 1 cup of pasta water before draining.
- Heat olive oil in a skillet over medium heat. Cook diced chicken with salt and pepper until golden and fully cooked. Remove and set aside.
- In the same skillet, cook chopped bacon until crispy. Remove and set aside, leaving about 1 tbsp of bacon grease in the skillet.
- Sauté garlic in the skillet for 30 seconds.
- In a bowl, whisk together eggs and Parmesan cheese. Slowly add ¼ cup of reserved pasta water to temper the eggs.
- Add cooked spaghetti to the skillet. Turn off the heat and quickly toss with the egg mixture until creamy. Add more pasta water if needed.
- Mix in the cooked chicken and bacon. Garnish with fresh parsley and serve immediately.
Notes
- Use pancetta instead of bacon for an authentic flavor.
- Work quickly with the egg mixture to avoid scrambling it.
