Description

This Best-ever Chicken Carbonara Recipe combines tender chicken, crispy bacon, creamy sauce, and al dente pasta for an irresistible dinner that's quick and easy to make!


Ingredients

  • 12 oz spaghetti (or pasta of choice)
  • 2 boneless, skinless chicken breasts, diced
  • 6 slices of bacon, chopped
  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • 1 tsp minced garlic
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook spaghetti in salted water according to package instructions. Reserve 1 cup of pasta water before draining.
  • Heat olive oil in a skillet over medium heat. Cook diced chicken with salt and pepper until golden and fully cooked. Remove and set aside.
  • In the same skillet, cook chopped bacon until crispy. Remove and set aside, leaving about 1 tbsp of bacon grease in the skillet.
  • Sauté garlic in the skillet for 30 seconds.
  • In a bowl, whisk together eggs and Parmesan cheese. Slowly add ¼ cup of reserved pasta water to temper the eggs.
  • Add cooked spaghetti to the skillet. Turn off the heat and quickly toss with the egg mixture until creamy. Add more pasta water if needed.
  • Mix in the cooked chicken and bacon. Garnish with fresh parsley and serve immediately.
