Description

Ingredients

  • Cake:
    • 2 1/2 cups all-purpose flour
    • 2 tsp baking powder
    • 1/2 tsp salt
    • 1 cup unsalted butter, softened
    • 2 cups sugar
    • 4 eggs
    • 1 tsp vanilla extract
    • 1 tsp lavender extract
    • 1 cup milk
    • 1 cup fresh blackberries
  • Frosting:
    • 8 oz cream cheese, softened
    • 1/2 cup unsalted butter, softened
    • 4 cups powdered sugar
    • 1 tsp vanilla extract
    • 2 tbsp dried lavender flowers


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla and lavender extracts.
  4. Gradually add the flour mixture alternately with milk, starting and ending with flour. Gently fold in blackberries.
  5. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool cakes in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  7. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, then vanilla. Mix until creamy.
  8. Once the cakes are cool, spread frosting between layers, on the sides, and on the top of the cake. Sprinkle dried lavender on top.

Notes

  • Ensure the lavender is culinary grade to ensure it's safe for consumption.
  • If fresh blackberries are too tart, sprinkle them with a little sugar before adding to the batter.
