Ingredients
- Cake:
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 2 cups sugar
- 4 eggs
- 1 tsp vanilla extract
- 1 tsp lavender extract
- 1 cup milk
- 1 cup fresh blackberries
- Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
- 2 tbsp dried lavender flowers
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream the butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla and lavender extracts.
- Gradually add the flour mixture alternately with milk, starting and ending with flour. Gently fold in blackberries.
- Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool cakes in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, then vanilla. Mix until creamy.
- Once the cakes are cool, spread frosting between layers, on the sides, and on the top of the cake. Sprinkle dried lavender on top.
Notes
- Ensure the lavender is culinary grade to ensure it's safe for consumption.
- If fresh blackberries are too tart, sprinkle them with a little sugar before adding to the batter.
