Ingredients
- 2 cups cooked rice
- 2 cups fresh broccoli florets, steamed until tender
- 1 can (10.5 ounces) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/2 cup sour cream
- 1 small onion, finely chopped
- 2 tablespoons butter
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 1/4 cup grated Parmesan cheese
- 1/2 cup bread crumbs (optional, for topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large bowl, mix the cooked rice, steamed broccoli, cream of mushroom soup, cheddar cheese, milk, and sour cream. Stir in the chopped onion, garlic powder, salt, and pepper.
- Transfer the mixture to the prepared baking dish. Smooth the top with a spatula.
- In a small pan, melt the butter and toss the bread crumbs to coat. Sprinkle the buttery bread crumbs and Parmesan cheese over the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is heated through.
- Serve hot.
Notes
- For a crunchier texture, add chopped nuts like almonds or walnuts to the breadcrumb topping.
- If you prefer, you can use frozen broccoli instead of fresh; just be sure to thaw and drain it well.
