Ingredients

  1. 8 lasagna noodles, cooked according to package instructions
  2. 2 cups cooked chicken, shredded
  3. 1 cup buffalo sauce (adjust based on your heat preference)
  4. 1 cup ricotta cheese
  5. 1 egg
  6. 1/4 cup blue cheese crumbles
  7. 1/4 cup green onions, chopped
  8. 2 cups shredded mozzarella cheese
  9. Salt and pepper to taste
  10. 1/4 cup grated Parmesan cheese
  11. 1/4 cup fresh parsley, chopped (for garnish)
  12. Optional: Ranch or blue cheese dressing for dipping

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine shredded chicken and buffalo sauce, ensuring the chicken is well-coated.
  3. In a separate bowl, mix ricotta cheese, egg, blue cheese crumbles, half of the green onions, salt, and pepper.
  4. Lay out the cooked lasagna noodles on a flat surface. Spread an even layer of the ricotta mixture on each noodle.
  5. Place a layer of the buffalo chicken mixture on top of the ricotta layer.
  6. Sprinkle a bit of shredded mozzarella on each noodle.
  7. Carefully roll each noodle, starting from one end to the other.
  8. Place each roll-up seam side down in a baking dish.
  9. Pour any leftover buffalo sauce over the roll-ups and top with the remaining mozzarella and Parmesan cheese.
  10. Bake in the preheated oven for 25 minutes, or until the cheese is bubbly and golden brown.
  11. Remove from the oven and sprinkle with chopped parsley and the remaining green onions.
  12. Serve hot with a side of ranch or blue cheese dressing if desired.
