Ingredients
- 8 lasagna noodles, cooked according to package instructions
- 2 cups cooked chicken, shredded
- 1 cup buffalo sauce (adjust based on your heat preference)
- 1 cup ricotta cheese
- 1 egg
- 1/4 cup blue cheese crumbles
- 1/4 cup green onions, chopped
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped (for garnish)
- Optional: Ranch or blue cheese dressing for dipping
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine shredded chicken and buffalo sauce, ensuring the chicken is well-coated.
- In a separate bowl, mix ricotta cheese, egg, blue cheese crumbles, half of the green onions, salt, and pepper.
- Lay out the cooked lasagna noodles on a flat surface. Spread an even layer of the ricotta mixture on each noodle.
- Place a layer of the buffalo chicken mixture on top of the ricotta layer.
- Sprinkle a bit of shredded mozzarella on each noodle.
- Carefully roll each noodle, starting from one end to the other.
- Place each roll-up seam side down in a baking dish.
- Pour any leftover buffalo sauce over the roll-ups and top with the remaining mozzarella and Parmesan cheese.
- Bake in the preheated oven for 25 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and sprinkle with chopped parsley and the remaining green onions.
- Serve hot with a side of ranch or blue cheese dressing if desired.
