Ingredients
- 4 boneless, skinless chicken breasts
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried rosemary (or 1 tbsp fresh, finely chopped)
- 1/2 tsp ground cumin
- Salt and pepper to taste
- Optional: Fresh chopped parsley for garnish
Instructions
- Marinate the Chicken: In a bowl, combine the garlic, lemon zest, lemon juice, olive oil, oregano, rosemary, cumin, salt, and pepper. Mix well. Place the chicken breasts in a large zip-top bag or a shallow dish and pour the marinade over the chicken. Ensure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, ideally 2-4 hours.
- Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat.
- Grill the Chicken: Remove the chicken from the marinade, letting any excess drip off. Place the chicken on the hot grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken has nice grill marks.
- Rest and Serve: Once cooked, remove the chicken from the grill and let it rest for a few minutes. This allows the juices to redistribute. Slice against the grain and garnish with chopped parsley if desired.
