This cheesy chicken and rice casserole recipe is a comforting, one-dish meal packed with tender chicken, creamy rice, and gooey cheese.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups cooked rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 1 ½ cups shredded cheddar cheese
  • 1 cup frozen peas and carrots
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • ½ cup breadcrumbs (optional for topping)


Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • In a large bowl, mix cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper until combined.
  • Stir in the shredded chicken, cooked rice, frozen peas and carrots, and 1 cup of shredded cheddar cheese.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Top with the remaining ½ cup of shredded cheddar cheese and breadcrumbs (if using).
  • Bake for 25-30 minutes, or until bubbly and golden on top.
  • Let it cool for 5 minutes before serving.

Notes

  • You can substitute cream of chicken soup with cream of mushroom soup for a flavor variation.
  • Add cooked broccoli for an extra veggie boost.
