Description
This cheesy chicken and rice casserole recipe is a comforting, one-dish meal packed with tender chicken, creamy rice, and gooey cheese.
Ingredients
- 2 cups cooked chicken, shredded
- 2 cups cooked rice
- 1 can (10.5 oz) cream of chicken soup
- 1 cup milk
- 1 ½ cups shredded cheddar cheese
- 1 cup frozen peas and carrots
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
- ½ cup breadcrumbs (optional for topping)
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
- In a large bowl, mix cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper until combined.
- Stir in the shredded chicken, cooked rice, frozen peas and carrots, and 1 cup of shredded cheddar cheese.
- Pour the mixture into the prepared baking dish and spread evenly.
- Top with the remaining ½ cup of shredded cheddar cheese and breadcrumbs (if using).
- Bake for 25-30 minutes, or until bubbly and golden on top.
- Let it cool for 5 minutes before serving.
Notes
- You can substitute cream of chicken soup with cream of mushroom soup for a flavor variation.
- Add cooked broccoli for an extra veggie boost.
- Store leftovers in an airtight container in the fridge for up to 3 days.
