Ingredients

  • 14 oz kielbasa, sliced
  • 1 cup long-grain white rice
  • 2 cups broccoli florets
  • 1 ½ cups shredded cheddar cheese
  • 1 small onion, chopped
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  • Heat olive oil in a large skillet over medium heat. Add sliced kielbasa and cook until browned, about 5 minutes. Remove from the skillet and set aside.
  • In the same skillet, sauté the chopped onion for 3-4 minutes until softened.
  • Add the rice, garlic powder, and chicken broth to the skillet. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes or until rice is tender.
  • Stir in broccoli florets and kielbasa. Cover and cook for an additional 5 minutes, until broccoli is tender.
  • Remove from heat and stir in the shredded cheddar cheese until melted and combined.
  • Season with salt and pepper to taste, then serve.
