Ingredients
- 1 lb boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can (10 oz) diced tomatoes with green chilies
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add sliced chicken, season with fajita seasoning, salt, and pepper. Cook until chicken is no longer pink.
- Add sliced bell peppers and onion to the skillet. Cook until vegetables are tender.
- Stir in diced tomatoes with green chilies.
- Transfer mixture to a greased 9x13 inch baking dish.
- Top with shredded cheddar and Monterey Jack cheese.
- Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
- Remove from oven and let cool slightly before serving.
