This chicken fajita casserole recipe is a flavorful and convenient dish combining tender chicken, vibrant bell peppers, and savory spices, all baked to perfection. Perfect for busy weeknights and family dinners.


  • 1 lb boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning
  • Salt and pepper to taste


  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add sliced chicken, season with fajita seasoning, salt, and pepper. Cook until chicken is no longer pink.
  4. Add sliced bell peppers and onion to the skillet. Cook until vegetables are tender.
