Ingredients
- 2 lbs chicken parts (wings, drumettes, or thighs work well)
- Juice of 3 limes
- 1 large onion, thinly sliced
- 4-5 garlic cloves, minced
- 2-3 celery stalks, chopped
- 1-2 hot peppers (such as Scotch bonnet or habanero), seeded and finely chopped (adjust to your heat preference)
- 1 tsp salt, or to taste
- 1/2 tsp black pepper
- 1/2 tsp allspice
- 10 cups water
- 2 medium potatoes, diced
- 1 bell pepper, thinly sliced
- 1 tbsp cooking oil
Instructions
- Clean the chicken parts with the juice from 2 limes, then rinse with cold water.
- In a large pot, heat cooking oil over medium heat. Add onions, garlic, celery, and hot peppers. Sauté until the onions are translucent.
- Add the chicken pieces to the pot and brown slightly on all sides.
- Pour in the water and bring to a boil.
- Add salt, black pepper, allspice, and the remaining lime juice. Reduce heat to a simmer.
- Add the potatoes and bell pepper to the pot.
- Cover and simmer for about 45 minutes or until the chicken is tender and fully cooked.
- Adjust seasoning as needed.
- Serve hot, garnished with additional lime slices or chopped fresh herbs, if desired.
Notes
- Chicken souse is traditionally served with "johnny cakes" or light bread in the Bahamas.
- If you prefer, you can add other vegetables like carrots or turnips.
