Whip up this Chicken Tomato Pasta recipe with tender chicken, juicy tomatoes, and a flavorful garlic and herb sauce. Perfect for weeknights!
Ingredients
- 12 oz spaghetti or penne pasta
- 2 tbsp olive oil
- 2 chicken breasts, diced
- 3 garlic cloves, minced
- 2 cups cherry tomatoes, halved
- 1/2 cup tomato sauce or crushed tomatoes
- 1/4 cup chicken broth
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil, chopped (for garnish)
- Grated parmesan cheese (optional)
Instructions
- Cook pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, drain, and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until golden and fully cooked. Remove and set aside.
- In the same skillet, sauté garlic for 1 minute until fragrant. Add cherry tomatoes and cook until softened, about 3-4 minutes.
- Stir in tomato sauce, chicken broth, Italian seasoning, and red pepper flakes. Simmer for 5 minutes.
- Add cooked pasta and chicken to the skillet. Toss to combine. If the sauce is too thick, add reserved pasta water as needed.
- Adjust seasoning with salt and pepper. Garnish with fresh basil and parmesan cheese before serving.
Notes
- Substitute cherry tomatoes with canned diced tomatoes for convenience.
- Add spinach or arugula for extra greens.
- Serve with garlic bread for a complete meal.
