Whip up this Chicken Tomato Pasta recipe with tender chicken, juicy tomatoes, and a flavorful garlic and herb sauce. Perfect for weeknights!


Ingredients

  • 12 oz spaghetti or penne pasta
  • 2 tbsp olive oil
  • 2 chicken breasts, diced
  • 3 garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 1/2 cup tomato sauce or crushed tomatoes
  • 1/4 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil, chopped (for garnish)
  • Grated parmesan cheese (optional)

Instructions

  • Cook pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, drain, and set aside.
  • Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until golden and fully cooked. Remove and set aside.
  • In the same skillet, sauté garlic for 1 minute until fragrant. Add cherry tomatoes and cook until softened, about 3-4 minutes.
  • Stir in tomato sauce, chicken broth, Italian seasoning, and red pepper flakes. Simmer for 5 minutes.
  • Add cooked pasta and chicken to the skillet. Toss to combine. If the sauce is too thick, add reserved pasta water as needed.
  • Adjust seasoning with salt and pepper. Garnish with fresh basil and parmesan cheese before serving.

  • Substitute cherry tomatoes with canned diced tomatoes for convenience.
  • Add spinach or arugula for extra greens.
